About Me

Barb: Hi! My name is Barb and I have a background in food and design. When my daughter went to pre-school and I started packing lunches for her, the teachers always made comments on how much they enjoyed seeing what was in her lunchbox each day. So this year I have decided to document her lunchbox daily to give other mums ideas on what to include in their kids' lunches. My daughter Lulu is not partial to sandwiches so I am always having to be creative in what I am putting in to ensure protein for health, carbs for energy and liquid for hydration. I hope you enjoy watching her lunchbox each day and are inspired to make healthy tasty lunches for your kids!

Hints and Tips...

I often make up the lunchbox the day before and then there is no rush in the morning when everything else is happening!

Make a batch of mini pies and tarts and keep them in the freezer; pop these in the lunchbox in the morning so they keep fresh for lunch; they will be defrosted by lunchtime.

Use bite size portions of everything so it is easier for the kids to eat them.

Have dried fruit, jars of olives and pickles in the pantry so you always have something easy on hand for the lunchbox.

Put the sticker with their name on the BOTTOM of the lunchbox so they don't see it and pick at it, eventually peeling it off!

Have two lunchboxes (Lulu has a purple and a pink one) so that while she is at school with one box, if I am preparing say a salad for dinner I may cut up the veggies for her lunchbox the next day and get her lunchbox started while she is still at school.

If your child is dairy intolerant, pop a box of vegetable juice in there for added nutrients rather than the milk.
