17 March 2011 - ST PATRICK"S DAY!!


Happy St Patrick's Day all!  Lulu's school is having a mufti day today but kids have to wear green for St Pats, so I  thought I'd theme the lunchbox accordingly!

First up, I used one of Tyga's lunchboxes so it was green to start off with, then we have granny smith apple cheeks, box milk (which has a green labeling on it anyway -lucky!!), green capsicum, snow peas and cucumber, sushi rolls with avocado and cucumber and some hard boiled egg that I coloured green!  Lulu doesn't like the yolk of the egg so it was easy to just colour the white....

How did I do it?  I boiled the eggs as usual and plunged them in cold water once done (to stop that grey ring forming around the yolk). Filled a glass with some filtered tap water and put some green food colouring in it.  I then peeled an egg, cut it in half and took out the yolk then submerged the whites in the green water for an hour.  And hey presto!  Now of course they say they want green eggs all the time and I need to get some ham to go with it!

    What do you recommend as pantry staples, to remove that panice of 'Oh no I have nothing in there'. Maybe a shopping list we can download?

    I work with lots of kids with allergies etc and always get asked - what can i feed them if i cant have wheat and dairy?

    I bet you have some fabulous ideas!

  3. I will in later posts be giving recipes for mini pies and tarts, all of which can be adapted for gluten free and dairy very easily. Whenever I give recipes i will try and offer alternatives for allergy sufferers. Keep following!

  4. Basics I keep in my pantry (which I know not all kids eat!) are olives, pickles, dried fruit (Lulu takes that for morning tea) and rice crackers. Then I keep stuff in the freezer such as the mini pies and tarts, with no need to defrost they are a good fall back plan when there is nothing else in the house!
