Had a big job on today, so had to make it with what was around. Avocado, box milk, quiche (from function I was doing), baby bel cheese, cream cheese and rockmelon. Easy!

So we have to buy the frankfurts in a vacuum bag of about 15, so you will notice we always have them 2 days in a row! But I love these franks; they don;t have that artificial red colour and they are nice and smoothe with no grissly bits. So in todays box we have franks and sauce, mandarine, box milk, red capsicum and roasted pumpkin. Was roasting some pumpkin for a job I have on, so thought it would be an easy thing to pop in the lunchbox.

Coctail franks (we got to the butcher on the weekend!), with a tub of tomato sauce, box milk, mandarines, cornichons and red capsicums. WE were at the markets at Frenches Forest on Sunday and this man was forcing these mandarine wedges on us for a tasting. The mandarines looked big and I thought they would have heaps of pips so I refused but lulu landed up having three. On the way back to the car she says to me "mummy, none of the mandarines the man gave me have pips in them". Well back we went to see the man and sure enough they are a Japanese variety and have no pips. So now Lulu will gladly have a mandarine in her lunchbox. And I will too!

Yay! As you can see I got to the shops!!! So she got some cream cheese (she calls it dippie), red capsicum - to dip in the cream cheese hence the name - box milk, passionfruit (that easter bunny was very generous with his passionfruit!), rice crackers and mortadella ( or della as she calls it). Lunchbox came back completely empty.

Still haven't made it to the shops as you can see - it's pretty much the same as yesterday with the addition of tomato sauce as requested for her sausage rolls!!! So we have sausage rolls with tomato sauce, swiss cheese, box milk, passionfruit, carrots and cornichons I think she didn't eat the olives the day before so I gave them a miss.
27 April - 1st day of Term 2!!
Well school is back, and we only arrived back from holidays late the night before, so it was a matter of what we had in the fridge and freezer! The easter bunny brought Lulu passionfruit instead of eggs (they are her favourite!!) so we had some of those to include, box milk from the pantry, swiss cheese, cucumber and carrot, cornichons and olives and some sausage rolls. Not bad for pulling it out of not having been shopping since before easter!

Last day of term!!!! When Lulu was doing some reading with my mum late Wednesday afternoon, my mum was having a conversation with her about foods and Lulu said her favourite food was sandwiches. So I decided she could have a sandwich in her lunchbox! So with what I had on hand she got mortadella, roasted kumera, a vegemite sandwich, box milk, rice crackers and her favourite raspberries - they have been on special this week; cheaper than good strawberries!

No lunchbox today! Had to send her in with a plate of treats for their easter picnic and of course I forgot to photograph it! Anyway we all had a different thing to make, so I landed up with some pizza scrolls. Hope they enjoyed them!

OK - I promise I will go to the shops today and get some fresh fruit for her lunchbox tomorrow!!!! Today she has roasted sweet potato with parsley, box milk, mushrooms, red capsicum, cornichons and olives and rockmelon (again!!).

So still didn't go to the shops with a lunchbox in mind! Had some leftovers from yesterday's afternoon tea and dinner so rockmelon, box milk, hard boiled egg, roasted sweet potato, olives and cornichons and cheese and biccies.
For the roasted sweet potato I just buy sweet potatoes (usually kumera - the orange ones) and put them on a baking tray and bake at about 180 for an hour or so depending upon the size. A skewer inserted into it should glide easily in and out again when it is cooked. Delicious hot with dinner I put them into the lunchbox and have them in the fridge for the kids to eat cold as a snack. The kids eat them skin and all - the skin is good for all its nutrients so don't take it off for them!
