Tuesday morning and yes I went to the shops yesterday!  So we have dinner leftover of crumbed fish with a tub of mayo plus a frozen mini sausage roll (which we now call rock and rolls) because Lulu had an early start at school.  Then some crackers with rosella jam and a ham and cheese sandwich plus the beetroot which she loved, and some peeled and segmented orange.  

For the beetroot I cut the ends off and peel it (with gloves on to save my hands getting pink), wrap it in foil  - can do more than one at a time - then bake in the oven for about an hour.  No oil, no fat, just a beautiful concentrated beetroot flavour.  And it will keep in an airtight container in the fridge for a good few days.  My kids devour the stuff!
